Our Coconut White Balsamic Condimento is made for us by one of the most renowned makers of Balsamic Vinegars and Balsamic Vinegar Condimento in Italy. It is made from Trebbiano and Lambrusco grapes which are selected for their naturally high sugar content, as well as natural coconut flavoring. Trebbiano and Lambrusco grapes are pressed and the juice obtained from this pressing, called “must”, is heated in large copper cauldrons until the volume is reduced through evaporation. The flavor intensifies over the years, with the vinegar being transferred to wooden casks (made of oak, chestnut, juniper and cherry) becoming sweet and very concentrated. As time passes, part of the liquid in the vinegar evaporates and part of the liquid is absorbed into the wood. The liquid is transferred into smaller barrels while the new “must” is added to “top off” the bigger barrel. And so continues this process which is referred to as Solera.
